Anzac Biscuits

So today's the 25th of April which is Anzac Day for New Zealand and Australia. I though might as well make anzac biscuits as I haven't made them in a while and decided to share them with you guys as well! 



These are actually some of the easiest biscuits to make and the process is no longer than 5 minutes - trust me!

Ingredients
- 1 cup flour
- 1 cup brown sugar
- 1 cup desiccated coconut 
- 2 cups rolled oats
- 125g butter
- 1 tsp baking soda
- 2 tbsp honey/golden syrup 
- 3 tbsp water

Method
1. Preheat oven to 180°C
2. Mix flour, sugar, coconut and oats together
3. Dissolve baking soda in warm water
4. Melt butter and honey or golden syrup together
5. Combine all the wet ingredients with the dry mixture
6. Roll the mixture into little balls and press them on some baking paper. 
7. Pop them in the oven for around 12-15 minutes and done!

Note: The biscuits should be left out on a rack to cool as they harden up a while after taken out of the oven

I halved my recipe and ended up with 12 fairly big sized biscuits.


Super easy to make and I love these because they remind me of my childhood when teachers would bring these into school around this time of the year. 
They also keep you really full due to the oats in them and the coconut give them a really nice scent. If you decided to add a bit more golden syrup or honey be aware that they might burn a little quicker like mind sort of did.
